In the relaxed setting of my private dining area at Noya's Kitchen, classes are small and friendly, with groups of up to 6 people, giving you lots of one to one attention and entirely hands on cooking! I will show you how to use an array of specialist Asian ingredients, including exotic fresh herbs and spices to prepare the delicate, subtle balance of flavours: salty, sweet and sour that characterises Vietnamese cooking. So be prepared to roll up your sleeves and have fun cooking this wonderful aromatic cuisine. At the end of the class... sit, relax and enjoy your creations. Your take homes are my recipes, your new skills and your delicious food... if there's any left over!

Bún chả / Spring Rolls / Ginger & Chilli Chicken
I’m making an exciting change to this class for 2019, introducing the classic Vietnamese grilled pork & rice noodle dish, Bún chả - a speciality of Hanoi. It’s also a firm favourite at Noya’s Kitchen! Next you'll learn to fill, fold and roll the perfect spring roll. The tasty crunch of spring rolls are incredibly more-ish, especially when dipped in your own freshly made dipping sauce. Then a favourite at my supper club... a lovely warm ginger chicken stew, using fresh green pepper corns that bring a wonderful sweet, spicy and smoky balance to the dish.

Vietnamese Chicken Curry / Lemongrass Beef / Summer Rolls
Vietnamese curries are a hidden gem! They aren't as famous as their Thai or Indian counterparts but after cooking this fragrant Chicken curry with sweet potatoes, you'll be making it again and again. Jasmine rice best accompanies this curry so you'll learn the secret to perfect rice making. While the curry is gently cooking, you'll marinate the beef with lemongrass skewers, and make the perfect summer rolls. You will also learn to make the classic Vietnamese dipping sauce, learning to balance the flavours to suit your taste.

Bánh xèo / Vietnamese Dumplings / Ginger & Chilli Aubergine
This menu is a great introduction to some of my favourite Vietnamese street food dishes...
- Bánh xèo, crispy rice pancakes, are a classic dish in the south of Vietnam, often eaten for lunch, filled with prawn or marinated pork, served with fresh herbs and spicy dipping sauce.
- Dumplings are classic and delicious snack and you'll learn how to fill & fold the different shapes for wontons & gyozas, frying and steaming - it's a lot of fun!
- Ginger and chilli aubergine stir fry is a wonderfully fresh & zingy dish that can be served as a main or a lovely side dish.
