In the relaxed setting of my home kitchen, classes are small and friendly, with groups of up to 7 people, giving you lots of one to one attention and entirely hands on cooking! I will show you how to use an array of specialist Asian ingredients, including exotic fresh herbs and spices to prepare the delicate, subtle balance of flavours: salty, sweet and sour that characterises Vietnamese cooking. So be prepared to roll up your sleeves and have fun cooking this wonderful aromatic cuisine.

In this lesson, you'll be making the classic Vietnamese aromatic noodle soup, chicken pho. We'll make the broth from scratch, learning to balance the flavours to suit your taste. While the pho broth is infusing, you'll be preparing and marinating your spring roll filling, before learning to fill, fold and roll the perfect spring roll. The tasty crunch of Vietnamese spring rolls are incredibly more-ish, especially when dipped in your own freshly made dipping sauce. Then a favourite at my supper club.. a lovely warm ginger chicken stew, using fresh green pepper corns that bring a wonderful sweet, spicy & smoky balance to the dish.

Vietnamese curries are a hidden gem! They aren't as famous as their Thai or Indian counterparts but after cooking this fragrant Chicken curry with sweet potatoes, you'll be making it again and again. Jasmine rice best accompanies this curry so you'll learn the secret to perfect rice making. While the curry is gently cooking, you'll marinate the beef with lemongrass skewers, and make  the perfect summer rolls. You will also learn to make the classic Vietnamese dipping sauce, learning to balance the flavours to suit your taste.

1. ‘Join a Group’ – suitable for individuals or friends who wish to join a group of like minded people. Group sizes are 6 people and cost £55 per person for a 3 hour lesson, making 3-4 different dishes.

3. Private Lessons. For the ultimate Vietnamese cooking experience, I can tailor make a private class, with your choice of menu. We’ll prepare and cook every dish from scratch, with plenty of individual advice to maximise your skills. It’s totally hands on cooking!

In a private lesson we’ll make between 4 and 6 Vietnamese dishes, depending on how much time you have. Popular choices are the classic beef or chicken pho soup, marinated lemongrass skewers, summer rolls, fresh mango salads, fragrant Vietnamese curries, simple flavoursome stir fries and of course a must have at every meal, the dipping sauce Nước mắm chấm.

Private lessons for 2 people can be booked on Monday, Tuesday and Wednesday (day or evening) for £150 per person.
